Pork is a very interesting cut of meat to sous vide. Many of the cuts behave differently and the cooking technique ranges from long and low for ribs or pork shoulder to short cooking times for pork chops or pork tenderloin. Knowing the different sous vide pork recipes will help you properly cook any cut.

Most sous vide pork recipes are cooked at 135°F / 57.2°C for medium rare or 141°F / 60.5°C for medium. For tough cuts that are typically braised many recipes call for cooking temperatures of 156°F / 68.8°C or 165°F / 73.8°C, this results in a more traditional texture and some pork cooked at that temperature can also be shredded.
